One of the tourist sites most visited paid sites in Italy, which this year celebrates 80 years since the discovery and first exploration, a canteen which has been producing Apulian wines with Typical Geographical Indication and Controlled Designation of Origin since 1939, a wine which comes from native vines of the Itria Valley area.

Castellana Caves srl e Terrecarsiche srl They bring the food and wine excellence of Puglia into the cave with an experiment designed around wine White Quarry: ageing the wine in the bottle at the right level of humidity and temperature inside the karst complex of the Castellana caves, with the natural underground environment becoming the "perfect cellar" to cradle the wine.

Aging in the bowels of the earth. A return to the wine's origins, with limited production. Bottle aging in caves, thanks to the appropriate humidity and temperature, allows for micro-oxygenation through the uncapped cork, allowing for an exchange between the wine and the external environment, giving the wine greater longevity and a unique flavor.


The bottles of Cava Bianca will follow the refinement process at the Cave of the Source, in the small rooms that since the early 1950s have housed ultra-sensitive clinographs that record the tides of the earth's crust, shelters also useful for those who have explored the Castellana caves over the years, environments recently restored and made suitable thanks to the contribution of the Terrecarsiche company.

The event

Tuesday 4 December starting from 17,30 hours The presentation of the ambitious idea proposed to Grotte di Castellana srl ​​by the Terrecarsiche winery, a company that sought to promote Cava Bianca wine, produced from native Apulian grape varieties, creating a curious and innovative synergy with the local area.

The launch of the cave-aging trial, involving approximately 1000 bottles on a rotating basis, is the first step in a broader partnership with Terrecarsiche to promote the area and the karst complex of the Castellana Caves. This partnership will allow visitors to savor the colors of Puglia through its natural wonders and culinary excellence.
